The ube pancake recipe in 6 steps

  1. In a large bowl, sift the flour, the ube powder, the baking powder, the salt and the sugar. Sifting prevents lumps and guarantees an even colour.
  2. In another bowl, beat the eggs with the milk, the lukewarm melted butter and the vanilla.
  3. Pour the wet mixture into the bowl of flour. Whisk in gentle circles until you have a smooth purple batter. Do not overwork it: a few small lumps are fine, they are what keeps the pancakes fluffy.
  4. Let the batter rest for 5 to 10 minutes. This is the secret to light pancakes: the baking powder has time to work.
  5. Heat a non-stick pan over medium-low heat (not too hot, to protect the colour). Grease it lightly with butter.
  6. Pour a ladleful of batter into the centre and cook for 2 to 3 minutes, until small bubbles appear on the surface. Flip gently and cook for 1 to 2 minutes more. Repeat with the rest of the batter.

Stack the pancakes as you go under a clean tea towel to keep them warm.

Yes, the batter can be made up to 24 hours ahead and kept in the fridge in a sealed container. Take it out 10 minutes before cooking and whisk lightly to bring it back together. You will lose a little rise, but the ube pancakes will still be fluffy. A handy trick for a family brunch.

Can you freeze ube pancakes?

Absolutely. Once cooled, stack them with baking paper between each one and freeze in an airtight bag. They keep for 2 months. To reheat, a few seconds in the toaster or 30 seconds in the microwave.
