For 2 large glasses, allow:
- 2 heaped tablespoons of ube powder (about 12 to 16 g)
- 4 scoops of vanilla ice cream (or ube ice cream, or coconut ice cream for a more exotic version)
- 25 cl of well-chilled milk (whole milk for creaminess, or a plant drink of your choice)
- 1 teaspoon of sugar, maple syrup or honey, to adjust to your taste
- A pinch of salt (it wakes up the aromas, do not skip it)
- Optional: a few ice cubes for an even fresher result
For the decoration, get out some whipped cream, a few hazelnut pieces or some grated coconut. A trickle of purple coulis down the inside of the glass always makes an impression.
The recipe step by step
Preparation time: 5 minutes · Servings: 2 large glasses · Difficulty: very easy
- Take the ice cream out of the freezer 2 to 3 minutes before you start, to let it soften slightly.
- Pour the cold milk into the blender jug, then add the ube powder. Blend for 10 seconds to disperse it properly and avoid lumps.
- Add the scoops of ice cream, the sweetener, the pinch of salt and, if you like it very cold, a few ice cubes.
- Blend in short bursts until the texture is smooth, thick and even. Do not blend too long: the milkshake should stay nicely coating.
- Taste and adjust: a little more sweetener if needed, a dash of milk if it is too thick.
- Pour into two large glasses, crown with whipped cream and scatter with hazelnut pieces or coconut. Serve straight away, with a wide straw.

Vegan version
Replace the milk with a plant drink (oat, almond or coconut) and the ice cream with a sorbet or a plant-based ice cream. Since ube powder is 100% plant-based, the milkshake stays entirely plant-based, losing none of its colour.
Protein version
