How long does Ube Powder keep?

Ube Powder generally keeps for 12 to 24 months from its production date, provided it's stored in its original airtight pouch, away from moisture and light. After that date the powder isn't unsafe: it may simply lose a little aromatic intensity or the vividness of its color. This is not a use-by date, which applies only to fresh perishable products.

The 3 enemies of Ube Powder

Three factors can degrade the quality of your Ube Powder:

  1. Moisture. This is enemy number one. A powder that absorbs moisture forms blocks, loses its flow and can develop mold. So avoid leaving the pouch open in a steamy kitchen, or dipping a wet spoon into it.
  2. Heat. Above a constant 25 °C, the aromas can fade. A dark cupboard at room temperature is perfect; storing it near the oven or a radiator is not advised.
  3. Light. As with most spices and colored powders, direct light can slightly dull the purple color over time. An opaque pouch or an opaque airtight container solves that.

Our recommended storage method

The simplest way to store your Ube Powder well:

  1. Reseal the zip pouch carefully after each use. Push the air out if you can.
  2. If you prefer a separate container, choose an opaque glass or ceramic jar with an airtight seal. Avoid fully transparent jars left in bright light.
  3. Put the container in a dry cupboard, out of the sun and away from heat sources.
  4. Always use a dry spoon to scoop the powder.

Should you keep the powder in the fridge?

No, that's not recommended. Moving it into a cold, humid space (the inside of a fridge) is actually counterproductive: every time you take it out, the temperature swing causes condensation that can clump the powder. Ube Powder keeps better at room temperature, in a dry cupboard.

Can you freeze Ube Powder?

You can, but it's rarely useful. If you buy a large quantity (a 1 kg or 2.5 kg professional size, say) and want to store it for a very long time, you can freeze it in small, well-sealed bags. When you take it out of the freezer, let it come back to room temperature before opening to avoid condensation. For normal home use, a cupboard is plenty.
